bubble or bead (fine, persistent, creating
a soft mousse in the mouth).
This apple cider undergoes a secondary
fermentation in the bottle followed by
riddling and disgorging. Its time on lees
results in superior flavour development -
toasty, nutty, brioche flavours that
compliment the fresh crisp apple taste.
